Palm sugar is a product of the crystallization of fresh sap from the sugar palm tree (Arenga pinnata), which is processed traditionally and hygienically without the addition of chemicals.
This product is in the form of fine grains of light brown to dark brown, with a distinctive natural caramel aroma and a soft sweet taste.
Technically, palm sugar has a maximum water content of 5%, sucrose content ranging from 85% to 95%, and a maximum ash content of 2%.
The pH value ranges from 5.5 to 6.5.
This sugar has a uniform particle size with a maximum diameter of 1 mm, and is free from physical impurities, heavy metals, and harmful microbial contamination.
With good storage in a cool and dry place, palm sugar has a shelf life of 12 to 18 months.
